Most of our family came to visit over the holidays and whenever we get together I like to make some of their favorite recipes. One of the children’s favorite is Peanutty Cocoa Puff cookies. I thought I would try Cookies ‘N” Creme cereal since each of them like Cookies and Cream ice cream. I made a double batch since there were 18 of us. The cookies were a big hit with them as well as the adults. They certainly do not last long around my house. So if you would like to try them, the recipe is as follows:
6 cups of Cookies and Cream Cereal
1 1/4 cups of sugar
3/4 cups of corn syrup
1 1/4 cups of peanut butter (I use crunchy peanut butter)
Spread out wax paper on a table about 24 inches long to lay your Peanutty Cookies and Cream cookies on as you make them.
Pour 6 cups of Cookies and Cream Cereal in a large bowl. Set aside.
Add: 3/4 cup of corn syrup
1 1/4 cup of Sugar
Mix in sauce pan and bring to a very slight boil.
As soon as it comes to a slight boil remove from heat.
Then immediately add the peanut butter to the corn syrup and sugar mixture, and mix well.
Pour peanut butter mixture over the Cookies and Cream cereal, stir quickly.
With buttered hands scoop up a handful of mixture and form into balls.
Makes approximately 24-30 balls, according to how large you make your balls.
Cool and serve.
Peanutty Cookies and Cream Cookies
Ingredients
- 6 cups of Cookies and Cream Cereal
- 1 ¼ cups of sugar
- ¾ cups of corn syrup
- 1 ¼ cups of peanut butter I use crunchy peanut butter
Instructions
- Spread out wax paper on a table about 24 inches long to lay your Peanutty Cookies and Cream cookies on as you make them.
- Pour 6 cups of Cookies and Cream Cereal in a large bowl. Set aside.
- Add: 3/4 cup of corn syrup and 1 1/4 cup of Sugar.
- Mix in sauce pan and bring to a very slight boil.
- As soon as it comes to a slight boil remove from heat.
- Then immediately add the peanut butter to the corn syrup and sugar mixture, and mix well.
- Pour peanut butter mixture over the Cookies and Cream cereal, stir quickly.
- Carefully, with buttered hands taking care not to burn your hands, scoop up a handful of mixture and form into balls.
- Cool and serve.
Yummy! Bet you will want more than one.
