When I was looking for bargains after Easter I found these Pillsbury cookie mixes on sale for half price. So I bought several of them. I made the first batch as cookies and they turned out good and my family really enjoyed them. The second mix I decided to use the recipe on the back of the package and make Raspberry Lemonade Bars. We all like bars and these were especially tasty with the cream cheese and raspberry preserves.
Cookie Recipe:
If you like making cookies. This recipe is just great for making easy yet very tasty cookie. Here is what you will need:
1 box of Pink Lemonade Cookie mix
1 egg
1 stick of butter or margarine softened.
1 can of Pink Lemonade Frosting
Mix according to the package. (I rolled the ones I made into 1 inch balls and put them on an un-greased cookie sheet approximately 2 inches apart and baked them for 8-10 minutes at 375 degrees.) Do not over bake. Just light brown will do. Let cool slightly before removing from cooking sheet. Cool completely before frosting with Pink Lemonade Frosting. Makes 3 dozen.
Recipe for Raspberry Lemonade Bars:
1 package Pillsbury Pink Lemonade Flavored Cookie Mix
1 cup butter or margarine (softened)
1/3 cup Raspberry Preserves or Jam
1/4 cup sugar
1 egg
1 (8 ounce) package of cream cheese
Optional 3/4 cups of chopped walnuts or pecans
Spray a 8 x 12 inch dish with cooking spray.
Mix with fork the cake mix and a stick of butter or margarine that is softened.
Measure out 3/4 cup of mix for the top and press the rest in the 9 x 12 in prepared dish.
Bake for 10 minutes in preheated oven at 375 degrees.
Remove from the oven and spread 1/3 to 1/2 cup of raspberry jam or preserves over the crust.
In a mixing bowl mix cream cheese, sugar and egg.
Pour cream cheese mixture over the jam and smooth to the edges.
Sprinkle the 3/4 cup of pink lemonade mix over the top of the cream cheese mixture.
Optional – Top with 3/4 cup of chopped walnuts or pecan.
Return to the oven and bake for 20-25 minutes.
Remove from the oven and let cool before cutting into bars.
Cut into 30 bars.
