Recipe Post: I am always looking for meatless recipes and yet have protein. It is a bonus when they contain a good amount of fiber. A friend gave me this recipe and a bag of Red Beans. So I made it and I really enjoyed it. I shared a this dish with to a couple of friends and they really enjoyed it. The friend that gave me the beans liked it so well that she made the recipe herself the following week. I thought you might enjoy so I am sharing it with you. She got the recipe from Bush’s Best. I adapted slightly to our families liking. Here is how I made it.
Ingredients:
1 small onion, chopped
1 teaspoon of minced garlic
1 red or green bell pepper (if you use sweet peppers that are not bell, use approximately 4-6.)
4 cups of red beans (I used dried red beans and cooked according to package, ahead of time.)
1 29 ounce can of Italian tomatoes (drained and diced)
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
3 tablespoons butter
3 tablespoons flour
1 1/2 cups cold milk
1/2 cup Parmesan cheese
9 cooked lasagna noodles
6 ounces Gruyere cheese (shredded)
Directions:
Cook lasagna noodles according to box direction. Set aside until ready to assemble lasagna.
Spray skillet with olive oil and heat. Cook chopped onion,garlic and red or green chopped peppers. Cook until tender.
Then add red beans, tomatoes and spices. Let simmer for 10-15 minutes.
While the above is cooking make your cream sauce.
Melt butter in a sauce pan and add the flour. Blend until smooth and add milk slowly. Add Parmesan cheese and heat until it slightly thickens. Remove from heat until ready to use.
Preheat oven to 350 degrees.
Assemble lasagna:
Put 3 noodles in bottom of a 8 x 12 baking dish. Spread half of the bean mix on top of the noodles.
Repeat layers. (Top beans with 3 more lasagna noodles and then top the noodles with the rest of the bean mixture.)
Cover the bean mixture with the remaining lasagna noodles.
Spread the cream sauce on top of the noodles and then top with shredded Gruyere cheese.
Bake for 20 to 25 minutes or until slightly brown.
Remove from oven and let set approximately 5 minutes before cutting. Serve while hot.
If you are looking for a meatless super tasty meal, this one will be the right choice.
