Pizza Crust Recipe:
This recipe makes 3 (14 inch) pizza crust. I usually freeze two to use later. (For one crust cut ingredients into thirds)
2 1/2 cups of water
1 Tablespoon yeast
1/3 cup of sugar
1/4 cup of oil
2 teaspoons of salt
6 1/2 cups of flour
Put 2 1/2 cups of lukewarm water in a mixing bowl add 1 Tablespoon of yeast. Stir and let set for a minute or so and then add sugar, oil and salt. Mix well. Add flour one cup at a time. Blend well. Dough should be pull away from the side of the bowl, if it doesn’t add a little more flour.
I spray the bowl with cooking spray after my dough is the right consistency. I let the dough raise about 30 minutes and then divide it into thirds. Spread dough in pizza pans. (spray pans very lightly with cooking spray, if at all) You can let dough raise in the pans for 15-30 minutes and then bake at 350 degrees until lightly brown.
You could also use store bought pizza crust.
Topping ingredients needed for one pizza. (If you are making 3 pizzas triple these ingredients.)
Put on in the order listed below.
1/2 can of refried beans (16 ounce) (more is you like a lot of beans)
1 pound of taco meat – (1 pound of ground beef, chicken, turkey with 1 envelope of taco seasoning – cook until browned – drain off any grease. (This amount could be used for two pizzas, but if you like a meaty pizza use this amount.)
1 cup of salsa (more if you desire)
1 cup of crushed Doritos (more if you desire)
2 cups of shredded cheddar cheese
1-2 cups of lettuce shredded
2 – medium tomatoes
Zesty Italian Dressing (optional)
Spread refried beans on the pizza crust.
Next spread taco meat evenly on top of the beans.
Next top with salsa.
Add sweet peppers.
Add sliced onions.
Crush Doritos.
Sprinkle them on top of onions and peppers. You could add a little more salsa if desired.
Top with 2 cups of shredded cheddar cheese.
Bake in preheated oven at 350 degrees for approximately 15 minutes or until the cheese is melted.
Serve topped with lettuce and tomatoes if desired.
My husband likes to drizzle Zesty Italian dressing on top of his pizza.
Serve with a few extra Doritos.
