I simply love this time of year when our blue berries are ready to pick. We have several small bushes and only a couple of larger ones. We are reaping our harvest of them now. The other day we picked the ones shown in the picture.
I enjoying eating blueberries straight from the bush as I pick them. Some times I eat more than I should.
A lot of the family were visiting at the time of this picking so as the saying goes, “Many hands make light work” and it was certainly true for this picking. It started out with my husband, then one of our daughters joined in, then our son joined the ranks, and at last I went to lend a hand.
When we had finished, our other daughter said she would make ablueberry coffee cake out of some of them. It was so good.
So today I decided I would use up some of these blueberries and make a Blueberry Cobbler with a Strudel Topping. The following is how I made it:
Part 1
5 cups of blueberries
5 Tablespoons of white sugar
1/2 teaspoon cinnamon
2/3 cup orange juice
Wash the 5 cups of fresh blueberries and drain well.
Pour the blueberries in a bowl and add 5 Tablespoons of sugar, 1/2 teaspoon of cinnamon and 2/3 cups of orange juice. Mix lightly.
Pour into a 9 x 13 dish. Set aside.
Part 2
In a mixing bowl add the following:
1 cup of butter
1 cup of sugar
Cream butter and sugar until smooth and add
2 eggs
1 teaspoon of vanilla
Blend well.
Part 3
Then add 1 and 1/3 cup all purpose flour,1/2 teaspoon baking powder, 1 teaspoon of cinnamon, and 1 teaspoon of salt. Mix until smooth.
Drop spoonfuls of batter over the blueberries
Smooth batter over the blueberries.
Part 4
Make a Strudel Topping
2/3 cup of Bisquick (I used reduced fat)
2/3 cup brown sugar
4 Tablespoons butter
Blend together with a pastry blender until crumbly.
Add 1 cup of chopped pecans (optional)
Sprinkle the topping over the the batter.
Some of my family likes nuts and some don’t, so I added the nuts to half of the topping.
Bake in a preheated oven at 350 degrees for 35 to 40 minutes or until golden brown.
Serve while hot.
Looks Scrumptious! What could be better than this?
Perhaps Blueberry Cobbler with a scoop of ice cream.
So if you have lots of blueberries, this is the perfect dessert to make over and over again. I know it will be a hit with your family. It surely is with mine.
