This weekend is a very special weekend in our families life. Our granddaughter is getting married. Our son is celebrating his birthday and this Sunday is mothers day. A beautiful weekend to give thanks and praise to our God for His many blessings.

I am always looking for Peanut Butter recipes because my husband likes it so well. One of his favorites is Peanut Butter Cookies, so when I found this recipe at Jif.com I could hardly wait to try it. It is my favorite recipe for peanut butter cookies. I have altered the instructions slightly to fit our desire. When I make this recipe I double it twice which makes four times the recipe. I then freeze them and when my husband wants cookies he can just go to the freezer and take out as many as he likes. This recipe is one that will be irresistible to you. Here is what you will need for a single recipe:
3/4 cup of peanut butter (Jif is my preferred brand but on this day I didn’t have it on hand)
1/2 cup of Crisco
1 1/4 cup brown sugar (packed)
3 Tablespoons of milk
1 Tablespoon of vanilla
1 egg
1 3/4 cups of all purpose flour
3/4 teaspoon of baking soda
3/4 teaspoon of salt
Heat oven to 375 degrees.
Combine the first five ingredients in a bowl and blend at medium speed until blended well.
Then add the egg and blend. Combine flour, baking soda and salt, then add to creamed mixture on low speed until mixed well.
I take enough dough to make a 1 inch diameter ball. Place them on a cookie sheet, sprayed with cooking spay as seen below.
Take a fork, that has been dipped in regular sugar, and flatten the cookies.
I then place a peanut in each one.
Bake one baking sheet at a time for 7 to 8 minutes, or until just beginning to brown. Do not over bake. Remove from oven and let cool 2 minutes before removing from cookie sheet to cooling rack to cool completely.
Ready to eat!
