Each year when the apple harvest is ready to pick, my husband and I go apple picking. We went and picked some apples the other day and I started looking for new recipes. I found an a Apple Walnut Cake Recipe at Home Cooking About.com. It sounded really good. I like almost anything with walnuts and raisins and it had both. I have adapted it to our taste. My husband really liked it. I was going to take it to a ladies meeting but after he sampled it, he wanted me to make something else for the ladies meeting. It is more like a coffee cake.
Ingredients:
1 cup of sugar
1/2 cup of brown sugar
2/3 cups of cooking oil
3 eggs beaten
2 teaspoons of vanilla
3 cups flour
1 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon of cinnamon
3 cups peeled and chopped cooking apples
1 cup walnuts
1 cup raisins
Maple Topping
1
Tablespoon butter or margarine
1 cup powder sugar
1 Tablespoons milk2 teaspoons of Maple flavoring.
Instructions: Peel and chop apples into small pieces.
Mix flour, baking powder, salt,and cinnamon and set aside.
In a mixing bowl blend white sugar, brown sugar, eggs, oil and vanilla. Beat on low speed until blended thoroughly.
Add the flour mixture one cup at a time to the sugar mixture. The batter will be thick.
Add nuts, raisins, apples. Mix well.
Pour into a 9″ x 13″ dish that has been sprayed with cooking spray.
Bake at 350 degrees for 40 – 45 minutes or until golden brown.

Remove the cake from oven and cool slightly then drizzle the maple topping as seen below. (I put the maple topping in a pastry bag and used a number three tip to put the drizzle on cake.)
Serve while warm or cooled.
Store left overs in the refrigerator to preserve longer.
