Recipe Post:
When I visited my sister a few weeks ago, she served this Mexican Caviar recipe. My husband liked it so well, that we stopped at the store on our way home, and bought the ingredients, so we could make it when we got home.
It is good as an appetizer, hors d’oeuvres or just a snack food when watching television. It would make a very good party tray idea as well.
My sister didn’t tell me where she got the recipe, so I don’t know who to give the credit to, other than her. I do no not know why it is called caviar, since it doesn’t contain fish eggs. Perhaps it is called caviar because it has black eyed peas in it, which resemble eggs or because it seems like a delicacy. Most of our family really enjoys anything Mexican, so I thought you might enjoy this recipe as well, if you are a lover of Mexican food.
Here is what you will need:
Mexican Caviar
1/2 red onion
2 medium tomatoes, chopped and drained
1 green pepper
2 cloves garlic minced
4 green onions, chopped
2 cans (14 oz.) black eyed peas, drained
1 can (14 oz.) hominy, drained
1 8 oz. bottle of Kraft Zesty Italian dressing
1 fresh jalapeno pepper, chopped (remove all seeds)
Fresh cilantro (if you can’t find it, use the dried)
Serve on Tostitos Scoops
Dice all the vegetables.
Open all cans of vegetables and drain off all the liquid.
Add the beans and the hominy in a bowl.
Add each of the diced vegetables.
Add Cilantro and the Zesty Italian Dressing
Mix thoroughly.
Now it is ready to share with your guest on Tostitos Scoops.
Serve in bowls separately and let your guest make their own or serve them on the chips as seen below.

I have made this before and it is a big hit at a get together. I know it by the name Texas Caviar. I think the name comes from the black eyed peas because the black part sort of looks like fish eggs.
