My mom used to make cube steak and gravy when I was a little girl and I have made it through out the years. The price of steak is pretty high and so when I saw a recipe this recipe for Mock Steak with Mushroom Gravy in our church cook book placed there by a friend who is known for her cooking ability I thought I would give it a try. I added some spices to it and used ground chicken breast instead of hamburger because my husband doesn’t eat red meat due to health reason. We really enjoyed it, so I thought you might like to try it and see if you could eat more frugal and still enjoy the flavor.
Here is what you will need:
3 pounds of ground chicken breast or beef
1 package of Ritz crackers crushed into crumbs
2 cans of Golden cream of mushroom soup
1 cup of flour
1 teaspoon of pepper
1 teaspoon onion powder
1 teaspoon of garlic powder
Place one tube of Ritz crackers in a zip lock bag and using a rolling pen,
roll them until they are cracker crumbs.
In another Zip Lock baggie put 1 cup of flour, 1 teaspoon of garlic powder, onion powder,
and pepper, and mix thoroughly.
Put 3 pounds of ground beef or ground chicken breast in a large bowl. (If frozen, thaw.)
Add 1 can of cream of mushroom soup, crushed crackers and 1/2 cup of water mix into the meat.
Pour onto a cookie sheet and smooth out to all edges.
Cover pan with saran wrap. Put in the freezer and let it begin to freeze. When it begins to freeze
score it with knife into 8 or more servings according to the size of serving you would like.
When frozen or partially frozen (it is easier to handle frozen),
break apart and cook as many as you would like.
(I make this into two meals because there is only two of us, unless I have guest.)
Take from the freezer and roll in the flour spice mixture.
Put 1 to 2 tablespoons of oil in the pan and place floured Mock Steak patties in the pan. I cooked four at a time until golden brown and cooked thoroughly.
While patties are cooking mix the other can of Golden Mushroom Soup and 1 can of water.
I then make a mixture of 1 tablespoon of the flour mixture with the spices and 1/4 cup of water and blend it together, until smooth. Then mix it with the mushroom soup.
Remove mock steaks from pan and put the soup in the pan and let it thicken then put the mock steaks back in the pan and let them simmer on low for 20 minutes.
Serve with whatever you like. We like to serve it with herb mashed potatoes and green beans.
