Scripture to Live By:
You keep him in perfect peace whose mind is stayed on you, because he trusts in you. Isaiah 26:3
Count it all joy, my brothers, when you meet trials of various kinds, for you know that the testing of your faith produces steadfastness. And let steadfastness have its full effect, that you may be perfect and complete, lacking in nothing. James 1:2-4
I can do all things through him who strengthens me. Philippians 4:13
This is the day that the LORD has made; let us rejoice and be glad in it. Psalms 118:24
Happy Independence Day!
Recipe Post:
I worked at a Christian Camp for many years and one of the favorite cookies for campers as well as staff was the Monster Cookies. Each recipe batch would make 100 cookies. The cookies were named Monster Cookies because the size of the cookies. Each cookie measured 4-5 inches in diameter. My family will be here for the holidays and so I made a batch for them to enjoy. There will be 16 of us so I know we will need a batch of this size. The Monster Cookie is a hit will all of us.
If you would like to try our monster cookie recipe the following ingredients is what you will need.
1 dozen eggs
1 pound of butter
3 pounds of peanut butter (5 1/2 cups)
4 cups of brown sugar
4 cups of white sugar
1/4 cup of vanilla
8 teaspoons of baking soda
20 cups of Quick Oats
1 12 ounce bag of Chocolate Chips
1 pound of M & M candy
Cream butter, sugars and peanut butter.
Add eggs and vanilla and baking soda. Blend
In a separate bowl mix 20 cups of Quick Oats, 1 12 ounce bag of Chocolate Chips and
1 pound of M & M candy.
Pour peanut butter mixture over it and stir until blended well.
Using a 1/4 cup measuring cup of batter for each cooking, place on cooking sheet at least 2 to 3 inches apart.
As you can see in the picture the cookies spread out some.
Bake in preheated oven at 350 degrees for 16 minutes. They should look like the ones below.
Remove from oven and cool on cooling rack.
This recipe makes 100 four inch cookies.
If you would like to make a smaller batch you can use the following recipe.
This recipe makes approximately 25 cookies.
3 eggs
1 stick butter
1 cup of brown sugar
1 cup of white sugar
1 1/3 cup of peanut butter
1 tablespoon of vanilla
2 teaspoons of baking soda
5 cups of quick oats
3 ounces of chocolate chips
1/4 pounds of M & M’s
Serve on a plate to your family and store the rest in the freezer for later us.
They make a delicious gift for friends or neighbors.
I am so glad a large part of our family is here. We are enjoying being together and are so thankful for this time we can share in each others lives, as we celebrate our nation’s Independence Day. We so enjoy going to the parade together and having a cook out, with all the great food, enjoying the river with all the boating, swimming, canoing, tubing and kyaking. What fun!
These Monster Cookies will be enjoyed by all, through out this day of celebration. I must say they look yummy. I am so thankful I can share them with my dear family members.
Hope each of you enjoy this special day as we celebrate our Independence as a nation. May God continue to bless this nation and may we as a nation turn our hearts to the God who gave us this freedom.
Blessings to each of you,
