When my children were little, I would make my own Ice Cream Sandwiches. A man from our church would buy the Ice Cream Wafers in bulk and he would share some of them with me. A few months ago I was at End of the Commons Store in Amish country. I came across them being sold in 24 ounce packages. I bought a package of them, brought them home and started making my ice cream sandwiches again. Yes, I could go to the store and buy them ready made, but only in a few flavors. By making them myself I can choose what flavors I want to make them. I just bought two more packages of them. There are approximately 65 wafers in each package. That will make 65 more Ice Cream Sandwiches.
Breyer’s Ice Cream was on sale last week, so I chose several of my favorite flavors and brought them home to make Ice Cream Sandwiches out of. I could make Reese’s Chocolate and Peanut Butter, Butter Pecan, Strawberry Swirl, Heath Bar, or my husband’s very favorite, Vanilla.
Here is how I make them.
I lay out two rows of wafers. One row top down and one row top up.
Open the Ice Cream completely as shown.
Cut into slices 1/2 inch wide, across the width of the ice cream block.
Next, cut the slice in half lengthwise. This slice will fit perfect on the ice cream wafer.
Place the ice cream slice on the wafer that is right side down, as shown above.
Place the top wafer on top of the ice cream. Now you have your
homemade Ice Cream Sandwich in your favorite flavor.
Next I store them in the freezer, by first wrapping them in saran wrap, individually.
I then put them in plastic freezer bags and freeze them. When I want one, I can just get the flavor I want out of the freezer, unwrap and enjoy.
After a hard day of work, it is so refreshing to just relax and enjoy the flavor of my choice Ice Cream Sandwich. Yummy!
