Several years ago I helped a friend, who ran a Christian Camp, in the kitchen. She would ask me to make Sausage Gravy for the campers. I didn’t have a recipe written down, I just made it like my mother and sister made the gravy. One day she asked me if I would measure every thing and write it down so if she needed to make it and I wasn’t available she could do it. So the following is the recipe:
1 pound of pork sausage
3/4 cup of all purpose flour
1/3 cup of oil (if the sausage is pretty lean and you don’t have any grease from it in the pan.)
1 1/4 teaspoon of salt
1/2 teaspoon pepper
5 cups of water
1 cup evaporated milk
Place sausage in skillet and break it up into pieces as seen below.
After the sausage is cook, if there is not at least a couple of tablespoons of drippings in the pan from the sausage, add 1/3 cup of oil to the sausage before you add your flour.
Add the 3/4 cup of flour while mixing it into the sausage. Cool until flour begins to brown slightly.
Mix 1 cup of evaporated milk to 5 cups of water.
Begin to pour milk mixture into the sausage mixture slowly, giving it time to begin to thicken as you add it.
Continue to stir until all the milk is added and the mixture thickens to desired consistency. (It will continue to thicken after the heat is turned off and it sets for a few minutes.)
Gravy is ready.
Time to make the biscuits.
I use three ingredients:
1 3/4 cup of Self Rising Flour
1/3 cup of vegetable oil or shortening
1 cup of milk (a little more if needed)
I put 1 3/4 cups of flour in a mixing bowl,
I measure out the oil and the milk.
and pour in the 1/3 cup of oil or shortening and blend it well into the mixture until it looks like the picture below. (I use my hand but you can us a pastry blender)
Add the cup of milk, mix until the dough is sticking together.
Turn onto a floured board. Roll out to approximately 3/4 in thick. Cut into biscuits.
Place on an ungreased cookie sheet.
Bake in preheated oven at 425 degrees until golden brown, approximately 15 to 20 minutes.
Ready to serve with your gravy.
You could serve fruit with it.
or some of my freshFried Apples.
Either way this is good southern eating.
