Recipe Post:
My sister-in-law visited last week and she was telling me of a dish she had made for a family gathering. She said her family really liked it and so I thought I would try it on my family. My sister was visiting tonight so we had this for dinner. It is a great way to get lots of those garden vegetables into one recipe yet have those tasty ingredients that are so hard to resist. It is full of fiber, healthy carbs and protein.
Ingredients you will need:
1 head of cabbage
1 medium zucchini
1 yellow squash
1 onion
1 green pepper
1 can of tomatoes with green chilies
1/2 pound of pepperoni
1 pound of sweet Italian sausage
To remove some of the grease from the pepperoni, I put it on a napkin on top of a microwave oven dish. Microwave it for 1 minute and then pat the top of the pepperoni to get excess grease off it.
Cook sausage in a skillet, at medium heat, until well done, approximately 15 minutes.
Cool and cut into bite size pieces.
Cut up the following: Onion, green pepper, yellow squash, and zucchini into bite size pieces.
Cut cabbage into four pieces and remove the core from each piece.
Cut each section into bite size pieces.
Add cabbage to skillet and cook until it begins to turn transparent.
When sausage is fully cooked, remove from skillet and add the onion, yellow and zucchini squash. Cook until tender.(optional – I add 2 teaspoons of sugar to the mixture of vegetables)
When the vegetables are tender add the can of tomatoes with green chilies, stir and simmer for a few minutes.
Add pepperoni and Italian sausage. Simmer for another 5 minutes.
Delicious!
Vegetable Medley with Pepperoni and Italian Sausage

Serve alone or with mashed potatoes and fresh light rolls.
Tasty, healthy, full of veggies. A real treat for those who want to get more veggies in their diet but don’t want to loose the flavor.
