Ingredients

  • 1 head of cabbage
  • 1 medium zucchini
  • 1 yellow squash
  • 1 onion
  • 1 green pepper
  • 1 can of tomatoes with green chilies
  • ½ pound of pepperoni
  • 1 pound of sweet Italian sausage

Instructions

  • To remove some of the grease from the pepperoni, I put it on a napkin on top of a microwave oven dish.
  • Microwave it for 1 minute and then pat the top of the pepperoni to get excess grease off it.
  • Cook sausage in a skillet, at medium heat, until well done, approximately 15 minutes.
  • Cool and cut into bite size pieces.
  • Cut up the following: Onion, green pepper, yellow squash, and zucchini into bite size pieces.
  • Cut cabbage into four pieces and remove the core from each piece.
  • Cut each section into bite size pieces.
  • Add cabbage to skillet and cook until it begins to turn transparent.
  • When sausage is fully cooked, remove from skillet and add the onion, yellow and zucchini squash. Cook until tender.(optional - I add 2 teaspoons of sugar to the mixture of vegetables)
  • When the vegetables are tender add the can of tomatoes with green chilies, stir and simmer for a few minutes.
  • Add pepperoni and Italian sausage. Simmer for another 5 minutes.

Notes

Serve alone or with mashed potatoes and fresh light rolls.
