Recipe Post:
I love this time of the year when it is time to harvest the vegetables we have planted. We have been picking zucchini and yellow squash, a few tomatoes and a couple of green peppers. So I thought it was time to make some vegetable kabobs.
Here is what I used:
1 package of Baby Bella mushrooms
3 small yellow squash
2 zucchini squash
1 purple onion
2 green peppers
red and yellow mini peppers
wooden skewers
Put skewers in a pan of water to soak for approximately 15-20 minutes.
Cut veggies up as seen below.
You could add cherry tomatoes on the skewers but I didn’t have any so I sliced up some fresh tomatoes from my garden.
I made a dressing to to brush over the vegetable kabobs.
In a small bowl I mixed the following.
1/2 teaspoon of garlic powder
1/2 cup of olive oil
1 teaspoon basil leaves
1/2 teaspoon of salt
1/4 teaspoon of pepper
1/2 teaspoon of oregano
Mix well.
Brush dressing on kabobs, coating them well.
Grill approximately 15-20 minutes turning once.
You could also grill your steak at the same time.
I served my vegetables with steak and baked beans.
This is so simple to make.
Yet it is soooooo Yummy!!!!!
