Scripture to Live By:
The Bible speaks of the heart approximately 725 times.
The condition of our hearts affects everything in our lives.
Proverbs 4:23Keep thy heart with all diligence; for out
of it are the issues of life.
“A good man brings good things out of the good stored up
in his heart, and an evil
man brings evil things out of the evil stored up
in his heart. For the mouth speaks
what the heart is full of.”
If what comes out of my mouth
is an out-pouring of what is filling my heart, I truly need
to keep my heart with all
diligence.
What is
the meaning of diligence? Constant, earnest, persistent personal attention, a
steady effort. In our
text of guarding our heart with all diligence, it would be keeping a
watch over our heart so that
none of the things mentioned in Ephesians 4:30-31
would be ruling in our
heart.
“And grieve not the holy
Spirit of God, whereby ye are sealed unto the day of redemption.
Let all bitterness, and wrath,
and anger, and clamour, and evil speaking, be put away from
you, with all malice:
Hopefully by guarding our heart
with all diligence, only what is found in Ephesians
4:32 will rule in our
hearts.
” And be ye kind one to another,
tenderhearted, forgiving one another, even as God
for Christ’s sake hath
forgiven you.”
Recipe Post:
My family really enjoys these meatballs, so I make them up in large numbers to
have
on hand when they let me
know they are coming for dinner. They look forward to them,
when we have family
gatherings. I sometimes serve them with spaghetti and sauce, and
other times make meatball subs
with sauce and Mozzarella cheese.
I put them in serving size
freezer bags to have just for my husband and myself.
It is so nice to make ahead and
have them on hand to use at a moments notice.
I use my ground
chicken breast to make mine out of, but you can use beef, if you like.
By using the ground chicken
breast we are eating a lot less fat.
With the health issues that we
have, this is best for us. Hope you will try them and see if
your family likes them as well.
Things you will need:
6 lbs ofground chicken breastor ground beef
1 Tablespoon of Worcestershire sauce
1 Tablespoon of salt
1 teaspoon of pepper
1/2 cup of ketchup
4 eggs
1 cup milk
1 cup Italian bread crumbs
2 1/2 cups of quick oats
1 cup of parsley
1 cup of dried minced onions
Mix all the ingredients in a large bowl.
Blend well.
Roll out a strip of wax paper approximately two feet long.
Pour mixture onto the wax paper and shape into a rectangle.
Then cut the meat 10 strips width wise.
Then cut 6 stripes length wise.
By doing this you will have more uniform sized meatballs.
After I get my squares made, I then take each square and roll it into a meatball as shown.
You can bake or fry your meatballs. I chose to fry mine.
After frying or baking let cool.
If you are baking them, bake at 400 degree for 10 minutes then turn and bake for another 15 minutes. (Meat should no longer be pink inside.)
If you are frying them, fry for approximately 10 minutes or until browned.
(If you not sure if it is thoroughly cooked, cut one open, and if it is no longer pink inside, it is done.)
Divide into serving sizes for your family, and freeze until ready to serve.

You can serve with spaghetti, pasta sauce and Parmesan cheese,
Or you could serve the meatballs on Hoagie Rolls topped with pasta sauce and Mozzarella Cheese,
adding carrots, celery and some chips to complete your meal.
This recipe makes approximately 60 large meatballs. They are so good.
