I am so very thankful for the gift of family and all the love and things we can share. Our family really likes to share recipes with one another. Recipes that have been shared with us, and that have become a part of our family traditions. I would like to share one of such with you today.
We love pickled eggs and beets, my mother-in-law introduced them to me while I was dating her son. She made them only a few times a year, at Christmas and Easter. We have followed suite for the most part, but they are a treat any time of the year.
They add color to any table and are easy to make.
Things you will need:
1 gallon glass jar (You could use any suitable container)
4 cans of sliced beets
2 cups of vinegar
2 cups of sugar
24 eggs
1/3 cup of pickling spice
First, boil your eggs in a pot of water.
(I let mine come to a boil and boil them approximately 5 minutes.)
Remove from heat, pour hot water off and then run cold water over them.
The tip to peeling boiled eggs, is to gently crack them all over, then as you peel each egg put it back in the water to get the shell off easily.
After you peel each egg, put it in your jar.
Next, put the ingredients listed above in a pan and bring them to a boil, including the spices.
After this mixture has come to a boil, remove from heat and pour over your eggs. (I use a cup to do this instead of pouring from the pot, less chance of burning myself.)
Next step is to put the lid on them and put in the
refrigerator for approximately 2-3 days or longer to get the flavor throughout the egg.
Enjoy them at meal time or as a snack.
Suggestion: If you don’t want the spices loose in your eggs, you could put your spices in cheese cloth and tie it up so they can be removed from your pickled eggs, after the eggs have been flavored. (Don’t remove for at least 2-3 days.)
