We are on the eve of a New Year 2013. There is hope, it is a living hope in God. What will the New Year bring? None of us know what tomorrow will bring. The future is not ours to know, but I do know who holds the future. My times are in His hands and so are yours. He is trustworthy and faithful and sovereign.
Recipe Post:
I got this recipe out of my Kitchen Aid Stand Mixer Instructions and Recipes booklet. I have altered it to our families liking.
What you will need:
5 medium sweet potatoes, cooked and peeled
1/2 cup sugar
2 eggs
1/2 cup milk (I use skim milk)
2 Tablespoons of margarine or butter
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
Wash sweet potatoes and pierce with a fork then bake in an oven or cook in Microwave oven.
I cook the sweet potatoes in the microwave, two or three at a time for 8 minutes.Check to see if they are soft, if they are not return to the microwave oven and cook another two minutes or until soft.
Cool and then peel the skin off. (I usually half the potatoes and then cool and spoon the insides into a mixing bowl) Cook the next two potatoes and repeat the above until all potatoes are cooked.
Place potatoes in mixer bowl. Mix on low speed approximately 30 seconds. Add spices and mix for a few seconds, then add milk,sugar, eggs, and 2 tablespoons of butter.
Turn to medium speed and beat about 1 minute. Spread mixture into a greased 9 inch baking dish. Bake at 350 for about 25 minutes. While casserole is baking mix up Crunchy Praline Topping.
Crunchy Praline Topping:
4 tablespoons butter or margarine, Melted
1 1/2 cups of corn flakes
1/2 cups of pecans or walnuts
1/2 cup packed brown sugar
Measure corn flakes and put in a plastic bag and roll with a rolling
pen until cornflakes are chopped.
Add chopped cornflakes in mixing bowl add the rest of ingredients
and mix on low speed for 10 seconds. Spread on to sweet potato
puff. (remove casserole from oven before spreading on topping.)
Bake another 10 minutes.
Remove from oven and cool approximately 10 minutes before serving.
My husband thinks Sweet Potato Puff is better than Pumpkin Pie.
Sweet Potatoes are good for you. This is one way to get them into your diet. This recipe is well worth trying. We really enjoy it all year round.
