Scripture to Live By:
That I may know Him and the power of His resurrection, and the fellowship of His sufferings, being conformed to His death, if, by any means, I may attain to the resurrection from the dead. Not that I have already attained, or am already perfected; but I press on, that I may lay hold of that for which Christ Jesus has also laid hold of me.
Brethren, I do not count myself to have apprehended; but one thing I do, forgetting those things which are behind and reaching forward to those things which are ahead, I press toward the goal for the prize of the upward call of God in Christ Jesus.
These verses are very special to me. They were to my mother as well. They are meaningful to me as I think of all the Olympians, and the goal that each is striving for, and all the things that have been left behind to strive to reach the goal that they have set for themselves. But the Apostle Paul was striving toward the goal for the prize of the upward call of God in Christ Jesus. Just as the Olympians have to keep their focus on the goal they have set, so we as Christians must keep our focus on Jesus Christ and the goal He has for us, to be like Christ and to please Him in all we do as we live our daily lives.
When our children were young we would have them participate in planting, weeding, and the harvesting of our family garden. We would all pick and string beans together and make spaghetti sauce, can beans, tomatoes and salsa. We also had several grape vines. We ate a lot of the grapes, but we also canned grape juice and made grape jelly. We made freezer jam out of the strawberries we picked at a nearby friends’ patch. Another friend raised blueberries, and she would invite us over to pick blueberries. We would eat as many as we wanted, and with the rest we made blueberry muffins, blueberry buckle and blueberry pies. What wonderful memories of days gone by. We had so much fun. Our gardening was very much a family affair. We always raised zucchini squash. Zucchini is a very versatile vegetable, and can be used to make many different recipes.
We like fried zucchini, zucchini casseroles, zucchini in soups, on pizza, or as a substitute for applesauce. We made zucchini bread, zucchini squares, bars and especially zucchini pie. A dear friend shared this recipe with me many years ago. It is one of our favorite ways to use zucchini. I want to share it with you.
Things you will need for the filling:
For the topping you will need:
Margarine or Butter
You will need an 8 or 9 inch pie crust.
You can make your own or purchase one.
If you would like to make your own, my recipe for
it is as follows:
2 cups of flour
1 teas. salt
2/3 cup Crisco
Blend together then add:
5-6 tablespoons of water, blend well. Roll dough out to fit pie tin.
(This should make 2 eight or nine inch crusts)
Cut in half lengthwise.
Clean seeds out of squash with a spoon.
Slice squash crosswise, making slices approximately 1/4 inch thick.
You will need 6 cups of sliced zucchini.
Place the 6 cups of zucchini in a pot.
Add 1/3 cup of lemon juice.
Add 3/4 cup of white sugar.
Add 1 teaspoon of cinnamon.
Cook on stove for 10 minutes at medium temperature.
While the Zucchini is cooking, make up your topping.
In a bowl add the follow items.
Add 1 teaspoon of baking powder.
Add 1/2 cup of brown sugar.
Blend with 1 cup of all purpose flour, 1/2 cup of butter or margarine and 1/2 teaspoon of salt.
Set aside until ready to use.
When filling is cooked, pour it into your pie crust.
Add the topping, cover completely.
Place in the oven, and bake at 350 degrees for 45 minutes. (Place a pan under your pie to catch any liquid that may boil over. That way you will not have to clean your oven. If you coat the pan with aluminum foil you will not have to clean the pan. Just throw the foil away when you are finished with it.)
Pie comes out looking golden brown. Let cool for 15-20 minutes before serving.
We think it is delicious alone or served with ice cream.
The crumb topping is so good.
