Where we live in southern West Virginia there are lots of animals, and one of the pleasures we have is watching them. Our front yard joins a river. We see deer, mink, otters, beaver, fox, squirrels, bob cats and occasionally a snake or two.
We sometimes think our yard is a bird sanctuary. The other day we saw a bald eagle land in one of our trees by the river. We have seen him on several occasions. He must have a nest nearby. When our nine year old grand-daughter was here, a couple of weeks ago, she spotted him soaring in the sky before any of the rest of us.
Each year my husband and I enjoy the spring with all the new life we see. One of the things we enjoy is watching the rabbits with their young, but this spring we have not seen any. Maybe it is still to early for them. Since my thoughts have been upon spring and bunnies, I decided to make a spring bunny cake.
Many years ago, I purchased a cake mix that had instructions on the box for making a cut-up bunny cake . You could make a bunny by cutting up the two round cake layers. I do not remember the brand name of the cake mix that had the instructions, but I do remember how to cut it up.
I want to share with you what I did, so you can make one as well.
For this cake, I used a Betty Crocker cake mix and nine inch round cake pans.
First, grease and flour the cake pans. Set aside while you mix up the cake mix.
Mix up cake mix following the directions on the box. The yellow cake mix I used said to mix:
3 eggs
1/2 cup oil
1 cup of water
Put equal parts of the batter in each pan. Bake at 350 until golden brown, and the top is firm when patted. Remove from oven and let cool on racks.
I then cut one layer as seen below. The ears would come from cutting off the rounded area on each side. This will give you four pieces. Put the cut pieces together, two pieces for each ear. The square that is left will be the body of your bunny.
For the head and the bunnies paws, you cut from the second nine inch cake layer. Take a saucer and set it on the cake layer and use it as a pattern to cut the bunny head. I used the ring of cake that was left to make my four bunny paws. Divide the ring into eight equal parts. Stack two together. You will have your four paws. Set aside.
Make your frosting.
My frosting recipe is as follows:
4 cups powered sugar
2 sticks margarine
1 cup of Crisco
2 teaspoons of vanilla
1/3 cup evaporated milk
Beat at high speed with mixer for approximately 10 minutes.
Seal the cake with frosting until you are ready to do the design work.
Use a frosting bag with couplet and star tube #18 to do the final frosting. I frost the entire cake using the star tube. For the ears, the nose and back paws, I color some of the frosting with Wilton pink paste coloring. I used Wilton black paste coloring to make the coloring for the eyes, mouth and the front paws.
To make a tail for my bunny, I used a large marshmallow, attached it with frosting, and frosted it with the pink frosting.
I used jelly beans for his body decoration and a pink ribbon. I used green basket grass to cover the board.
My grandchildren will be coming tonight. I know they will enjoy eating this cute little bunny. Why don’t you try making one yourself?
