Scripture to Live By:
“One person esteems one day as better than another, while another esteems all days alike. Each one should be fully convinced in his own mind.The one who observes the day, observes it in honor of the Lord. The one who eats, eats in honor of the Lord, since he gives thanks to God, while the one who abstains, abstains in honor of the Lord and gives thanks to God.For none of us lives to himself, and none of us dies to himself. For if we live, we live to the Lord, and if we die, we die to the Lord. So then, whether we live or whether we die, we are the Lord’s. For to this end Christ died and lived again, that he might be Lord both of the dead and of the living. Why do you pass judgment on your brother? Or you, why do you despise your brother? For we will all stand before the judgment seat of God; for it is written,“As I live, says the Lord, every knee shall bow to me, and every tongue shall confess to God.”So then each of us will give an account of himself to God.” Romans 14:5-12
Recipe Post: This is a dish to get your protein, calcium, vegetable, and dairy all in one. It is one of my favorite. We served this at a Christian day camp many years ago and it is still a favorite for us. Hope you will give it a try and see what you think. Here is what you need:
2 16 ounce packages of frozen broccoli, cooked
3 cups of cooked chicken breast -(3-4 breasts)
2 cans of cream of chicken soup (I used 98 % fat free)
1 cup of Miracle Whip (I used Light Miracle Whip)
1 Tablespoon of lemon juice
1/2 teaspoon of curry powder
1/4 pound of shredded cheddar cheese
1 cup of baked potato chip crumbs
Cook chicken breast, cool and cut into bite size pieces.
Cook Broccoli as directed on the packages.
Line bottom of a 9 x 13 casserole dish with cooked broccoli.
Combine 2 cans of cream of chicken soup; 1 cup of miracle Whip; 1 Tablespoon of lemon juice; 1/2 teaspoon of curry powder and blend well.
Mix chicken into the cream of chicken mixture.
Spread the mixture over the broccoli.
Top with shredded cheddar cheese and baked potato chip crumbs.
Bake at 350 degrees for 30 minutes or until bubbly and golden brown.
Serves 8 adults.
This is healthy and delicious. I could have it more than once a week.
