My heart cry is that God will help me see His perspective, whenever I am in a difficult or uncomfortable situation. I want to continually remember that His hand in is in all my circumstances and He knows the end from the beginning. I can be assured that if God allows difficult circumstances that He has purpose in them for my life.
And we know that all things work together for good to those who love God, to those who are the called according to His purpose. Romans 8:28
Recipe Post: My husband went to a Men’s Fellowship at our church and he came home with two of these, ‘Ham Spinach Cups’ and said, “You have got to get the recipe for these.” I ate both of them and I agreed with him. Our pastor’s wife had made them. She said she didn’t know what they were called or where she got the recipe, so I am calling them Ham Spinach Cups. They are so good. They make great appetizers or snack food.
Here is what you will need to make them:
2 packages of frozen chopped spinach
2 8 ounces packages of cream cheese (I chose fat free.)
1 can of water chestnuts
1 package of deli ham (at least 24 slices)
2 teaspoons of minced garlic
1 container of shredded Parmesan cheese
Thaw the frozen chopped spinach, you can thaw at room temperature
or speed up by thawing in the microwave oven.
Once thawed squeeze the liquid out of spinach.
Open the water chestnut and drain, then chop into small pieces.
Mix spinach, water chestnuts, two eight ounce packages of cream cheese,
and 2 teaspoons of minced garlic together, with mixer on low speed, until blended.
Spay two muffin tins (12 cup size) with cooking spray.
You will need 24 slices of deli ham.
Push the ham slices into the muffin tin.
Divide spinach mixture equally among the 24 ham cups.
Approximately 1 serving size spoon heaped.
Top with shredded Parmesan Cheese.
(I divide the container of Parmesan Cheese between the 24 Ham Spinach Cups.)
Bake at 375 degrees for 15 minutes.
Make sure the cheese has melted completely.
If not cook another 3-5 minutes.
Remove from the oven and cool about 5-10 minutes before serving.
(Or until they can be hand held.)
They shrink some during baking.
Place on a serving dish and add fresh spinach leaves and cherry tomatoes for accent.
Or serve individually as an appetizer.
Ham Spinach Cups are really a favorite with me and my husband.
They are YUMMY!
