Our pastor challenged us to memorize portions the Word of God, this year. The above verses are some good verses to memorize and to see why it is important to do so.

Ingredients needed:
2 Packages of Egg Roll Wraps
2 packages of coleslaw mix
3 pounds of ground chicken breast (Go here to see how to Ground Your Own Meat.)
3 tablespoon of soy sauce (you can add more if you would like after you get it mixed up and it has cooked some – do a taste test)
1 tablespoon of corn starch
2 teaspoons of cooking oil
1 Tablespoon of sesame oil
1 Tablespoon minced garlic
2 teaspoons of ginger
1 Tablespoon of sugar
3 or 4 green onions sliced in small pieces
1 red, yellow or green pepper chopped
Salt and pepper to taste
Steps to follow:
1. Mix the following together and set aside.
1 tablespoon of soy sauce
2 tablespoons of water
1 tablespoon of corn starch
2. Saute in skillet
2 teaspoons of cooking oil
2 teaspoons of sesame oil
1 Tablespoon minced garlic
3. Add ground chicken breast, the soy sauce mixture and 2 teaspoons of ginger. (If you like more ginger flavor add another teaspoon). Let cook for a few minutes and then and all the other ingredients in skillet and fry until meat is no longer pink and coleslaw mix is transparent but not mushy.
After it is cooked, drain off excess liquid.
Assemble the things you need for assembling your Egg Rolls.
Line baking pan with parchment paper or spray with cooking spray.
Place egg roll mixture in a bowl, next place Egg Roll wrappers and a bowl of milk. (This is the order you will be assembling your rolls.)
Use approximately 2 heaping Tablespoons of mixture in each egg roll wrap.
Roll the bottom edge over your mixture.
Fold the sides inward over the roll.
Wet the top edge with the milk to seal the Egg Roll.
Continue to roll Egg Roll as shown below.
Place in baking pan.
(You can fry them in oil, if you like, but to reduce the fat and calories count, I bake mine.)
Spray with butter spray or cooking spray.
Bake at 350 degrees until golden brown, approximately 20 minutes.
Serve with Sweet and Sour Sauce, on a party tray
or as an individual serving.
Either way they are great.
If you are looking for party food for the Superbowl or just a family even of watching TV, these Healthy Egg Rolls will be a hit for any occasion. Try them and see for yourself.

Do you think there's a way to freeze these? I'm trying to stock my deep freezer before baby is born so we don't have to worry about what's for dinner!

I have some frozen in my freezer now. I just take them out, thaw them and heat them in microwave oven but you could heat them in the oven. Congratulations on being pregnant, hope you are doing well. Blessings, Jo-Ann

I love a good egg roll and one that's good for you is even better- thanks for sharing. I'm visiting from Full Plate Thursday. Scripture memory is a great challenge. Years ago I had a pastor who told us he was memorizing the whole bible just in case the book was ever taken away. That really made an impression on me and I began at that time to memorize scriptures. I don't think I'll master the whole book but even portions are worthwhile.

I have a question…so the stuff you mixed together at the beginning( soy sauce corn starch etc) is that then added to the skillet while cooking the cabbage?

Look at step three.The Soy sauce mixture is added there, then all the rest of the ingredients along with the cabbage and it is cooked together. We made these for dinner tonight. My husband and I really like them (he ate 7 of them!) However the bottoms got really brown and crunchy…is this what yours are like or should I cook them up higher (I have a gas oven)…

Nellana, My oven is electric. I would think that cook them up higher would help this. I glad you really liked them. Try raising them higher. Every think is cooked when you put them in the egg roll. The egg roll is the only thing that needs to cook so I would just keep an eye on them. In my oven I sometimes have to move things higher so they don't get to brown. Hope this helps. Yum! I made the filling and have cooked the eggrolls two separate times. Neither time could I get them to be really cripsy, mostly hard. The filling is still delicious though. I dip them in a little bottled orange sauce mixed with some soy sauce. I have some leftovers in the freezer uncooked, a little filling in the freezer and several cooked ones in the fridge for another meal. 4 of these baby's are approximately 9 Weight Watchers Points!
