Food Post:
My husband likes to make his own breakfast, most of the time. He likes to see what he can come up with. He and I both need to watch our cholesterol, so he likes to use boxed eggs with a regular egg. He believes he is cutting his cholesterol in half by doing this. (I like to eat boxed eggs only.)
Boxed eggs have 25 calories per serving which is 1/4 cup, 90 mg of sodium, 70 potassium, 5 grams of protein and less than 1 gram of carbohydrates.
One large Kroger egg has 70 calories, 5 grams of fat, 185 mg of cholesterol, 70 mg of sodium, 70 grams of potassium, 0 carbohydrates and 6 grams of protein. There is quite a bit of difference in a large egg and 1/4 cup of boxed egg., enough to help me make my choice for boxed eggs.
One morning he brought me this Mexican Egg & Bacon Wrap. It looked scrumptious, and after eating it, I can say it really was. I thought I would share it with you, so you could enjoy it as much as I did.
Here is what you will need:
1/4 cup of boxed egg (1/2 cup if you are not going to use a regular egg)
1 egg
1 Tablespoon of bacon bits
If you do not have a problem with cholesterol you can use regular eggs. Use 2 eggs for each large wrap. One for the small wraps.
Mix the eggs thoroughly
Add 1 tablespoon of bacon bits.
Mix well and put in the microwave with a cover over the bowl, if you are using a regular egg. Otherwise it may splatter in your microwave oven. Messy.
Put in microwave for 45 seconds, stop, stir, put back in and microwave 45 seconds longer, if you are using two egg equivalent. If you are only using one egg try 45 seconds.
(Each microwave oven may be a little different.)
Remove from microwave and cool slightly. While the eggs are cooling cut up a tomato as follows.
Spread egg down the center of the Tortilla pad. Using spoon slide it to one side.
Add your toppings. I put approximately 4 tablespoons of black bean and corn salsa.
(Add more if you like.)
Add mild cheddar cheese as desired. I usually use a tablespoon
Next, add two to three slices of tomatoes, as shown below
Next add a leaf of romaine lettuce folded.
I like sour cream, add one to two tablespoons on top of the lettuce.
Begin rolling your wrap up as you wrap, push the ingredients back with the wrap as seen above.
Secure the wrap with a toothpick when you finish wrapping.
Add some fresh fruit to your plate and you have all five food groups in one wrap, which
makes for a very healthy meal. As you can see I added fresh strawberries and watermelon, but you could add blueberries, cantaloupe, kiwi, mango or any other fruit.
It is as delicious as it looks. Hope you will try it. If you do I am sure it will become a favorite of yours, as well. You could serve it for breakfast, lunch or supper. It is just right for any meal.
