Recipe Post:
4 medium size yellow squash, chopped
1 large onion, chopped
1/2 pound Velveeta cheese or cheddar cheese, chopped
1 can cream of chicken soup
1 roll of Ritz crackers, crushed
2 Tablespoons margarine, melted
Layer sliced yellow squash, onions , Velveeta cheese and 1/2 can of the soup. Repeat the layers. Bake in a covered casserole dish at 350 degrees for 45 – 60 minutes. Then crumble the crackers and mix the margarine with them. Top the casserole with this mixture and bake for another 15 minutes uncovered.
I really enjoy this time of year when the garden is producing yellow squash. We really enjoy Yellow Squash Casserole and look forward to it each summer and fall.
Here is how you make it:
You need 4 medium size yellow squash.
Chop or slice it.
You will need the following ingredients as well.
Place 1/2 of the yellow squash in a 9×13 baking dish.
Slice or chop one medium size onion.
Put 1/2 of chopped onion on top of the yellow squash.
Cut 1/2 pound of Velveeta or cheddar cheese, chopped or sliced.
Place 1/2 of cheese on top of the onions.
Add 1/2 of the can, of cream of chicken soup.
Repeat the layers again, yellow squash, onions, cheese and soup.
Cover with aluminum foil. Place in preheated, 350 degree oven. Bake for 45 minutes. Check to see if squash is tender, if not bake another 15 minutes.
While casserole is baking, melt 2 Tablespoons of butter or margarine.
Crush 1 roll of Ritz crackers.
Mix the two together and set aside.
When casserole is tender, remove from oven and top with the cracker butter topping.
Return to the oven and bake 15 minutes.
Remove from the oven and cool slightly.
Serve with fresh carrots and celery, add a pumpernickel roll. Yummy!
This is so good. It is one of our favorite ways to cook yellow squash. We look forward to growing yellow squash, knowing how much we will enjoy the dishes we can make from it, especially this one.

I remember having this at home…I loved the crackers and the sauce but not the squash…now it's all good!!!
